How to cook the perfect pilau rice

This is how we cook our delicious, authentic pilau rice at Voujon Cafe. If you have a rice cooker, you can use it of course, but a good pan with a firmly fitted lid works perfectly.

What you will need:

1 cup basmati rice per person
1.5 tsp garlic & ginger paste (per cup of rice)
Knob of butter (or vegetable ghee)
Cinnamon stick (whole don’t break it up!)
3-4 Cardomom pods
3-4 Bay leaves
1 tsp vegetable oil
half tsp cumin seeds
1.5 cup water per cup of rice (1.5 parts water to 1 part rice)

How to cook

Simply add everything into the same pot, cover with a firmly fitted lid (you can use tinfoil to help seal in the steam) and cook over a medium heat for 8 minutes over gas or 15-20 minutes over electric. Let stand for 5 minutes and fork the rice to make it fluffy and delicious!
